Pulled to order, at the window
Every bowl starts as one rope of dough. The cook stretches it, folds it in half and stretches again, and every fold doubles the strands: two, four, eight. Seven pulls turn one rope into 128 noodles. It happens in the front window, so you can watch yours being made.
